An exciting opportunity has arisen for an experienced Brasserie Manager to lead the front-of-house team at one of Devon’s most renowned country hotels within their high-end brasserie serving modern British cuisine in a relaxed yet refined setting.

About the Role

 

As Brasserie Manager, you’ll take full ownership of the day-to-day operations of the hotel’s signature brasserie, managing a highly trained team, driving service standards, and ensuring every guest enjoys a memorable dining experience.

Working closely with the senior F&B leadership and a talented kitchen team, you’ll balance hands-on service with strategic management, ensuring consistency and quality across breakfast, lunch, dinner, and private dining.

 

Key Responsibilities

 

  • Oversee all aspects of the brasserie’s daily operation, ensuring a smooth and consistent service.
  • Lead, motivate, and develop the front-of-house team with a visible and supportive management style.
  • Collaborate with the events teams to deliver exceptional guest experiences.
  • Manage floor plans, bookings, and service flow for maximum efficiency and satisfaction.
  • Control budgets, rotas, stock levels, and service charge distribution.
  • Drive team training, mentoring, and performance reviews.
  • Maintain compliance with health, safety, and licensing regulations.
  • Review guest feedback and implement improvements where needed.

 

What We’re Looking For

 

  • Proven leadership experience within a quality restaurant or brasserie, ideally within a hotel setting.
  • Strong people management skills and a genuine passion for developing others.
  • Excellent floor presence and communication skills with a “guest-first” mindset.
  • Commercially minded with experience in budgeting, rotas, and operational KPIs.
  • A commitment to delivering warm, engaging, and professional service.
  • Enthusiasm for modern British cuisine, local produce, and seasonal menus.
